Healthy omelette recipe

  • 6 Eggs
  • 1 Green Onion
  • Handful of Cherry Tomatoes
  • Feta Cheese or Gruyere
  • Ham, cooked chicken or smoked salmon
  • Salt & pepper, herbs or spices of choice


Preheat your oven at 200°C on grill.

  1. In a large bowl, mix the eggs well until fluffy, add the other ingredients, chopped. Season well.
  2. Heat some olive oil in a non stick pan (that can go in the oven)
  3. Pour the mixture in the pan, and let it cook for 5-6 minutes until half cooked through.
  4. Transfer to the oven and cook another 3-4 minutes until cooked to your liking.
  5. Serve with a green salad and a piece of bread.
