Chicken Soup

  • 2 chicken breasts or chicken legs
  • 2 onions, chopped
  • 4 cloves of garlic, minced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 1 tablespoon of olive oil
  • 8 cups of chicken stock
  • 2 bay leaves
  • 1 small peace of fresh ginger
  • 1 lemon
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste



  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken and cook for about 5 minutes on each side until it’s lightly browned. (skip this part if you are using chicken breast)
  2. Remove the chicken from the pot and set it aside on a plate.
  3. Add the onions, garlic, ginger, carrots, and celery to the pot and sauté for about 5 minutes, until the vegetables are soft.
  4. Pour in the chicken broth, bay leaves, and thyme, and bring the mixture to a boil.
  5. Add the chicken back to the pot, reduce the heat to low, and let the soup simmer for about an hour, or until the chicken is cooked through and the vegetables are tender.
  6. Remove the chicken from the pot and let it cool for a few minutes. Then, shred the meat into bite-sized pieces and discard the bones and skin if using legs.
  7. Add the shredded chicken back to the pot and let it simmer for an additional 5 minutes.
  8. Taste the soup and season with salt and pepper as needed. I like to add a dash of lemon juice too.


Serve hot and enjoy your delicious and healthy chicken soup to help you fight the flu! You can also add noodles or extra vegetables like courgettes.
